Ingredients (Serves 4)
- 4 boneless, skinless chicken thighs (or breasts)
- 2 tbsp olive oil
- 1 medium sweet potato, peeled and diced
- 1 apple (Honeycrisp or Gala), cored and sliced
- 1 small red onion, sliced thin
- 1 tbsp Dijon mustard
- 2 tbsp pure maple syrup
- 1 tbsp apple cider vinegar
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and pepper to taste
Instructions
Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear on both sides until golden brown, about 3–4 minutes per side. Remove and set aside.
Cook the veggies: In the same skillet, add sweet potatoes and onions. Cook for 6–8 minutes until they begin to soften.
Add the apples: Stir in apple slices and cook another 2–3 minutes until they start to caramelize.
Make the sauce: Whisk together Dijon mustard, maple syrup, apple cider vinegar, and thyme. Pour the mixture into the skillet and stir to coat the vegetables.
Finish it off: Return the chicken to the pan, reduce heat to medium-low, cover, and cook for 10 minutes until the chicken is fully cooked and the flavors blend together.
